Pan Fried Rice

This is for my co-worker Kevin.    His kids love chinese food and the restaurant where he get carry out ,  the old battle-axe is always cusing him out in Chinese.   So he decided not give her any more money, hence no more chinese food. The kids love chicken fried rice the best and I told him it was pretty easy to make so here it is.

Pan Fried Rice4 cups cooked rice
4 eggs
1/2 tsp salt
1 tbsp water
3 1/2 tbs peanut oil
2 green onions sliced in to 1/8 ” pieces
2 diced cooked chicken breasts
( marinate in 2 tbsp Worcestershire sauce/2 tbsp kikomen soy sauce for 1/2 hour fry in peanut oil)
4 mushrooms sliced
1/2 can water chestnuts sliced
1/2 cup frozen peas
1 tbsp tamari sauce
3 tbsp chicken brothmix eggs water , salt, beat lightly Scramble eggs in 1 tsp oil.Remove from pan
heat rest of oil  until hot. Add onions stir fry for 30 sec
add chicken , mushrooms, water chestnuts stir fry for 1 min
add rice stir-fry 1 min.
add peas salt , tamari and chicken broth
add eggs, stir fry until rice is heated throughChicken can be replaced with pork ( the left over one pork chop, or the 3 bbq ribs you just couldn’t finish last night, or chopped up shrimp or all 3)
I used to take 1 left over bbq pork chop and make this for my family of five and still have some left over.

    This would pair nicely with some pan fried noodles! When’s that reciepe coming? 🙂
