Okay so it’s cold and snowy out , winter is here like it or not.
So it’s a great day to make Chile. If you make it today it will be better tomorrow . Or make it tomorrow early and it will still be good.
Now , I’m sure everyone has their own recipe that they like best.
Well here is mine and maybe you can try it or take some ideas from it to JAZZ up your own.
Pretty simple, you can throw all this into a 4- 5 qt crock pot , set the timer and fahgetaboutit.
Or put it all in a stock pot that you will have to stir every time you get up to get a beer while you are laying around watching movies or the game all day.
( This is the best way. I don’t know why but it tastes alot better )
…… hey, whatya gonna do ?
1 – 2 lb. hamburger – browned
1 large onion – chopped , mix with
1 green pepper – diced, sauté both in hamburger grease.
Add
2 cans dark kidney beans – drained , rinsed
2 cans light kidney beans – drained rinsed
1 bottle beer – real bear not lite – these days I’m liking Sammy Adams lager to cook with , and Old Style is always good too.
1 jalapeno pepper – minced
1 Hungarian pepper – minced or the 6 rings if you don’t have whole ones
1 small can chipotle in adobo sauce 3.5 oz
1 tsp. horseradish
1 tbsp. Worcestershire sauce
5 beef bullion cubes
2 tbsp. catsup
2 tbsp. mustard
3 tbsp. Chile powder
1 tsp. fresh ground pepper – 3 or 4 grinds
1 tbsp. Mexican oregano ( get this , It make a difference !)
1 tbsp. basil
1 tbsp. ground cumin – if y0u don’t have this you better get some cause it what make a lot of Mexican and Tex -mex and Indian food REAL
1 tsp. salt – you can add more at the end if you need to
a couple of dashes of your favorite hot sauce
cook all day on low , a good six hours at least.
Ladle into a bowl with shredded cheddar cheese , some chopped onions , some crackers and you are all set
