OH ! YEAH ! —- CALAMARI !

Okay  , So this  is  so great .

First off ,  I  am  so excited !  Like a kid on Christmas Morning !.

I have had a bag of frozen squid in my freezer for a while and I keep telling myself that I am going to experiment with cooking it because I keep reading all the recipes for calamari ,  and the cooking times   have varied from 40 seconds to four minutes to UNTIL GOLDEN BROWN.

Well let me tell you something , UNTIL GOLDEN BROWN IS SO COMPLETELY  WRONG !!!!!! DO  NOT DO THIS !!!

 

 

 

Calamari is a very different kind of fish – dish – cephalopod mollusk . sq3     sq4

Well if you cook it quick , for the exact right amount of time ,  it is very good ,   crisp/ soft succulent piece of heaven .
If you cook it just a few seconds to long you get a bread coated rubber band.
If you simmer it in a stew  lets say ,  you get a very flavorful tidbit of ocean deliciousness.
It’s all how you cook it.

So…. okay I did the experiment . ( yes I know how to do that because I work around scientists and they are really smart ….osmosis don’t you know )
So I get my Crisco up  to 375′ because that’s where I deep fry my other stuff .    Different recipes called for anywhere from 325 to 400 ‘

Then I mixed 1 cup flour with 1 tsp. salt and 1 tsp. pepper.

then I lightly dropped the calamari rings into the flour and covered completely

Shook of excess flour and laid the rings into the hot Crisco.

 

 

Results of time trails:

30 sec – flour coating does not cook and squid is still raw ( although too warm for sushi )

1 minute – coating just barely set squid not done

1  1/2 minute – coating almost crisp squid almost done

2 minutes – EXACTLY CORRECT – EXCELLENTAI – PERFECTOOO — SO GOOD YOU CAN’T BELIEVE IT.  

It is going to be a bit pale like the pictue up above

 

It is not golden brown like in the restaurants  .

I do not know why ( possibly the addition of cornmeal or whole wheat flour ???? )

 

2 1/2 minutes kinda tastes like a rubber band

3 minutes – YES IT DOES TASTE LIKE A RUBBER BAND

4 Minutes – it is a beautiful GOLDEN BROWN , and you are defiantly eating a crisp lightly coated RUBBER BAND.

 

So in conclusion ( cause that what scientist say ) 2 minutes is the optimum time to fry the squid to produce the most exquisite tasting Calamari you have ever tasted.

Now Ladies and Gentlemen yu will no longer have to Roll the dice when you go out to a restaurant to see  if you are going to get good Calamari or a  plate of rubber bands

 

 

A bit   of fresh Squeezed  lemon and a sprinkling of Flat  Parsley and you to will be in Heaven  .

A glass of good Italian Vino ,  It just doesn’t get any better ……..
