KUGELIS  BULVIU POLKSTAINIS –    ( Coo – gu – la )     that’s   Flat Potato Dish for our non Lithuanian friends.

 

 

 

Where is Lithuainia you ask ?    Why it’s right here  ……….

 

What do you mean you don’t know any Lithuanian people.

Okay , So this is a great side dish for Christmas and also any time of the year,   Heck, sometimes this could be the whole meal.

So every ones bobutė ( gramma ) has a recipe for  this ,  and this   one is mine.

 

 

1 pound bacon, diced

2 large onions – diced

1.2 cup butter

5 lb. russet (red skinned ) Potatoes – peeled and put in a large bowl cover by water, this is to prevent them turning gray . ( oxidizing )

When you shred them , do not dilly dally or they will turn gray,  also you can put them in a bowl of water with a splash of lemon juice and then drain them real well before continuing, Squeeze them and wring them

Working in batches, place the potatoes in a clean dishtowel and thoroughly wring out the excess liquid over the sink .

 

 

1 12oz. can evaporated milk

6 eggs

 

 

 Preheat oven to 350 degrees F (175 degrees C).

Place bacon in a Dutch oven set over medium heat, cover, and cook until the bacon has softened and begun to release it’s grease.

Stir in the onion and cook until softened and translucent.

Continue cooking and stirring until the mixture caramelizes and turns a deep, golden brown. Remove from heat and stir in butter to melt.

 Shred potatoes into the onion mixture,    using box grater. (yes , you are going to use this item a lot )

Mix  potatoes and bacon – onion   thoroughly

 Stir the evaporated milk  and eggs until well combined.

Mix into potato mixture.

Pour into a 9×13-inch glass baking dish  

Bake in preheated oven for 1 hour, or until golden on top.

Remove and let stand for 10 minutes before slicing into 3×3-inch squares.

Can be served with a dollop of sour cream
