PIEROGI — POLISH FILLED DUMPLING

 .     PIEROGI       —-     (pyeh-rroh-ghee)

Okay  , so today is National Pierogi Day.
I did not know this.     Seeing how I indulge on  PIEROGIES at Christmas usually
 .
But , Hey lets celebrate !!!!!!!!!!!!
PUT A LARGE POT OF WATER ON THE STOVE TO BOIL
 .
DOUGH:
 .
2  1/2 cup flour
1 egg
1/2 tsp salt
 .
Put flour in a bowl and make a little crater in the middle
Add egg and salt and mix until you get a workable dough ( might need a little water here )
Let rest 20 min
.

FILLINGS :
 Sauerkraut  AND MUSHROOM
 .
1 CAN FRANKS Sauerkraut
2 TBSP BUTTER
1 ONION CHOPPED SMALL
2 HARD BOILED EGGS CHOPPED
 .
Drain  Sauerkraut — KEEP CAN  – VERY IMPORTANT
 .
Franks, Sauerkraut Can, 27 OZ (Pack of 12)
 .
PUT IN SAUCE PAN , COVER WITH WATER AND COOK ON  LOW  FOR 20 MIN.      DRAIN’
MELT BUTTER AND SAUTE ONION AND MUSHROOMS UNTIL JUST STARTING TO TURN BROWN ON THE EDGES
ADD Sauerkraut AND MIX FRY UNTIL JUST GOLDEN BROWN
COOL
ADD 2 TBSP SOUR CREAM AND CHOPPED EGGS .  MIX WELL

Filling
 .

PRUNE FILLING:
OPEN THE CAN
 .
 .
 .
SAVORY CHEESE:
 .
8 OZ FARMER CHEESE ( REALLY CHEAP IF YOU GO TO A POLISH DELI )
2 TBSP SUGAR
JUICE OF 1 LEMON
1 EGG
1/2 TSP VANILLA
1/2 TSP SALT
 .
CRUMBLE CHEESE AND MIX EVERYTHING TOGETHER
 .
 .
 .
ROLL DOUGH OUT  AS THIN AS POSSIBLE WITH OUT TEARING
( YOU CAN DO IT JUST KEEP AT IT )
HERE COMES THE GOOD PART }
TAKE THE  SAUERKRAUT  CAN AND USE IT LIKE A COOKIE CUTTER TO CUT OUT 3 ‘ CIRCLES
PLACE 1 HEAPING TEASPOON OF FILLING IN THE CENTER
DIP YOUR FINGER IN A SMALL BOWL OF WATER AND USE LIKE A BRUSH AROUND  EDGE OF 1/2 OF THE CIRCLE
FOLD IN HALF AND PRESS TIGHT.
USE A FORK TO CRIMP THE EDGE.

DROP 4 OR 5 AT A TIME INTO THE BOILING WATER
THEY WILL BE DONE WHEN THEY FLOAT ( ABOUT 5 MIN.)
REMOVE WITH A SLOTTED SPOON
BRUSH LIGHTLY WITH COOKING OIL TO PREVENT THEM FROM STICKING TOGETHER

MELT A LITTLE BUTTER IN A FRYING PAN AND FRY PIEROGIES LIGHTLY UNTIL YOU HAVE JUST A LITTLE GOLDEN BROWN ON THEM.
