CROCK POT MEATLOAF

Okay, So tis is the beginning of a CROCKPOT CONCATENATION of worldwide recipes that you have only dreamed about !

NAY !    Tidbits that will temp and thrill your palate to epicurean delights  ……………..

Yeah , I know , Meatloaf is meatloaf so get on with it …..

It is comfort food and really simple.

 

1/2 cup shredded carrot

1/2 cup shredded potato

This is a hand food processor. If you don’t have one you should get one they’re pretty handy

1 tbsp. olive oil

1 beaten egg

2 tbsp. milk

1/2 cup dry breadcrumbs

handful QUAKER OATS   q2

3 tbsp. minced parsley

1 tsp. onion salt

1 tsp. garlic powder

1/2 tsp. fresh ground pepper

1 1/2 lb.  or so  ground beef

3 tbsp. catsup

1 tbsp. mustard

In a small frying pan sauté carrot and potato until tender.

In a mixing bowl whisk egg and milk.

Stir in onion salt , garlic powder ,  parsley ,  pepper

Stir in breadcrumbs and oats

Mix in beef ( use your hands , they work the best )

TAKE 3 SHEETS FOIL

Fold into  3  —   18 x 2 inch strips   foil

Lay strips in crockpot with ends hanging over the edges

Shape beef mixture into a ball

Flatten to look like a 1/2 basketball        (because my crockpot it round

or a 1/2 foot ball if yours is oval )

Place beef BALL on top of foil strips in th crockpot

Cover and cook for 9 1/2 hour Mix catsup and mustard , spread on top of beef and cook for 30 more min.

Lift  MEATLOAF out of pot by grabbing the foil strips , and lifting to retain shape.
