Tuscan Onion Bombs

Okay So these are SSSSSOOOOOOOOOOOOOOO good  and easy to make.

This recipe comes from Steven Raichlen of Barbecue Bible Fame.

How come nobody thought of this before.

2 large sweet onions – 9 – 10  oz

1 LB ground chuck

1/2 LB pork sausage

3 garlic cloves  – smashed and minced

1 large egg – beaten

1/2 cup dry bread crumbs

1/2 cup Parmesan cheese

1 1/2 TBSP chopped fresh basil Italian flat parsley

1 TSP oregano

1 1/2 TSP salt

1 TSP fresh ground pepper

18 slices bacon

Your favorite bbq sauce

Slice the root off the stem end of the onions.

Cut each onion in half lengthwise and remove papery skin.

Separate onions in layers , keeping the matched pair together.  reserve the largest 3 pairs from each onion.

In a large bowl , mix   ground chuck , sausage , garlic , egg , bread crumbs ,cheese ,herbs salt and pepper

Assemble     DA BOMBS :

Place 2 matching onion layers on table , rounded side down.

Mound a portion of meat mixture ( form a ball )  in 1 half.

Top with the matching half

Wrap each  BOMB with 3 slices of bacon. Secure with toothpicks

Repeat until you have 6 Bombs


When you have a nice bed of coals on 1/2 of the grill    ( or you have fired up the gas  )

Brush grate with oil and throw a hand full of wood chips on the coals.  ( gas grill make a foil smoker pouch )

Put the bombs on the unlit portion of the grill away from the heat.

Crumple up some foil and place the BOMBS on that to keep them upright

Cover grill with lid

Smoke-roast until bacon is crisp    (about 45 – 60 min ).

Last 10 min brush with BBQ sauceOnion bombs with barbecue sauce

Let rest 5 min before serving.

Eat and Enjoy !

Okay as good as this is ……  it’s going to get better !!!!!!!!!!!!!!!!


Mexican – Substitute Chorizo for the meat and Monterey jack or Chihuahua  Cheese for the Parmesan  ,   Herbs  ,  Cilantro and Mexican oregano .   Maybe some jalapeno and chipotle in adobo sauce

Bombs in a Boat –  slip the Bombs IN to a green Pepper that you have cut the top off and seeded. Then wrap the pepper in Bacon.
