Skinny Italian Beef & Peppers Casserole

Okay, So I got this from the Skinnymom blog.  Turns out it is pretty quick for a week night meal  and doggone good
 I have doctored it up alittle.

 

4 bell peppers ( red , yellow, green, orange ) dicedppp
1 lb. ground beef
3 cloves garlic – minced
3 green onions – minced
I beef bouillon cube = crushed
juice I lemon
1 tsp. each – oregano, basil, crushed fennel ( or use .7 oz Italian dressing mix packet )
4 stalk celery – diced
2 tbsp. Giardiniera   ( hot )
1  15oz can garbanzo beans – drainedgarbonzo
1/2 cup grated Parmesan cheese
1/2 tsp. red pepper flakes
olive oil
Preheat oven to 350′ Spray 9×13 casserole dish with cooking spray or olive oil
Large skillet brown ground beef
Remove beef and in same skillet
add alittle oil   celery ,  peppers. garlic and onions. Cook until just barely soft,
Return beef to pan and add lemon juice oregano , basil , fennel red pepper flakes beans and 1/4 cup water
Add Giardiniera ( don’t be afraid d to use hot , it gives it a nice taste without the heat,,,,or you can use mild , I guess )
Mix everything and cook for 3 min
Turn mixture into casserole dish Sprinkle with cheese
Bake for 20 min
