BUDAPEST BORSCHT — VEGAN ALERT

Okay, SO these are maps of  HUNGARY  the country  ,    not hungry    Like you might very well be …..

Today we are going to make authentic Hungarian borschtBorscht (photo)

This is a combination soup and stew that can easily be a full meal with some whole grain bread and maybe a glass of EGRI BIKAVER wine ( also from HUNGARY ) 

Also called BULL”S BLOOD

Also very important is to use real PAPRIKA   like   

Okay lets get started

1 1/2 lb .   red cabbage – sliced into 1/4 ” strips

5 beets    – peel and cut into match sticks ( Julienne )

5   small potatoes    –  diced

6   plum tomatoes –  cut into quarters

1 1/2   tbsp.. olive oil

1   onion  – diced

3   cloves garlic – minced

6    cups water

1/2   cup red wine vinegar

1   tbsp.. honey

3   tbsp. parsley – chopped

1   tsp. thyme

1  bay leaf

1 1/2   tsp. dried dill

1   tbsp. HUNGARIAN PAPRIKA

2   tsp. kosher salt

1/2   tsp. fresh ground pepper

1/2   cup sour cream fresh dill for garnish

IN a 4 qt. pot heat oil add onion and sauté for 5 min add garlic

add cabbage, beets,  potatoes,  tomatoes,  water, vinegar,  honey,  parsley,  thyme bay leaf,  dill,  paprika,  salt and pepper.

Bring to a boil and reduce heat.

Simmer for 25 min. serve with a dollop of sour cream and garnish with dill
