SPICY CHICKEN RIGATONI

Okay, SO … Doesn’t that look good ?   It sure does and it’s easy to whip up for a week night dinner.

2 chicken breasts – cut into super thin strips

7 cloves garlic – minced

2 tsp.  red pepper flakes

1/2 tsp. fresh ground pepper

1/4 tsp. salt

4 tbsp. olive oil

2 cups alfredo sauce – ( recipe to follow )

2 cups marinara sauce – your own or I like NEWMANS OWN if you buy store-bought

1 lb rigatoni noodles –  buy a good brand (Barilla for example   )Barilla Rigatoni Pasta - 1 Box (1 lb)

2 tbsp. butter

fresh grated Parmesan cheese ( DO NOT USE THE SAWDUST IN THE GREEN CAN )

 

Put water on to boil for the pasta

 

Make Alfredo Sauce

1   stick butter

1     8 oz. package cream cheese – cut into cubes

1    cup 1/2 and 1/2

1/3    cup grated Parmesan cheese

1   tsp. garlic powder

1/2   tsp. pepper

1   tsp. parsley

In a sauce pan melt butter over med heat

Add cream cheese and cook stirring until cheese melts

add 1/2 and 1/2 and whisk  until well mixed

add Parmesan cheese and whisk until well mixed

Add garlic and  pepper and parsley

Stir for a few minutes until it starts too thicken up.

 

Water should be at a boil and you can add the pasta.

 

In a large skillet ,  2 Tbsp. oil and minced garlic . Then turn on heat to medium , this way you won’t brown the garlic which is not very good. Add red pepper flakes and ground pepper and sauté until garlic is just lightly golden.

Add Chicken salt and cook until chicken is done.    Only a couple of minutes.   When is it done ?    When it looks done …. taste it and see.

Add  marinara sauce,  stir well ,  then add alfredo sauce , stir well.

Let  simmer for 10 minutes

Add butter,

Drain pasta   ….    DO NOT RINSE IT  !!!!!!!!!!

Add pasta to sauce and mix well

Plate and serve with a good amount of grated cheese and a little parsley .
