SAUERKRAUT AND SAUSAGE CASSEROLE

Okay, SO this takes about   1  1/2 hour,   but 50 min its in the oven so really it’s only about 1/2 hour

4 Tsp. olive oil

1 large onion – chopped

1 1/2    Tsp caraway seeds

1 large sweet – tart apple – chopped

1 cup dry white wine

12 oz fully cooked kielbasa – cut into 1/2 ” slices  ( Polish Sausage for my non-polish friends )

1 28 oz. can of Franks sauerkraut – drained 

 

3 Tbsp. cider vinegar

1 Tbsp. brown spicy mustard

4 grinds of pepper

2 large white potatoes – sliced thinly

1 Tbsp. butter – melted

Set oven to 400′

In a large skillet heat 2 tsp. oil and sauté onion until it starts to brown

Stir in caraway seed , stir

Add apple and wine , stir and cook until most of the wine has evaporated

Stir in sausage , vinegar , mustard salt and pepper.

Transfer to a 9 x 13 ” baking dish

Toss potato slices with 2 Tbsp oil butter ans a little salt until fully coated

Cover sauerkraut with potato slices , overlapping them  just like in the picture above.

Bake for 50 min until potato edges start to crisp and brown on the edges.
