Okay, so it must be week night special because here is another one.

2 Tbsp. butter

1 med. onion – chopped

1 lb.  fresh mushrooms – sliced, paprika pickle

2 Tsp. real Hungarian paprika

1 dill pickle – minced

1/2 lemon – juice

1 Tbsp. flour

1 cup chicken stock

1 cup whole milk

1/4 cup sour cream

In a heavy sauce pan melt butter

Sauté onion until soft.

Add  mushrooms ,  paprika and pickle salt and pepper

Sauté 10 min.   Add lemon juice

In a separate pan melt 1 Tbsp butter . Add 1 Tbsp flour and stir. THis will make a roux. Continue to whisk for about 10 min until it turns a light tan

Add milk , mix well

Add chicken stock , mix well

Add soup to mushroom mixture.  heat to simmer

Whisk in sour cream.

With some rye bread this could be a whole meal.
