MACHACA – WHAT IS THAT ???

The fulgorid insect Fulgora laternaria (often misspelled “lanternaria“), is a planthopper known by a large variety of common names including lantern fly, peanut bug, peanut-headed lanternfly, alligator bug,machaca, chicharra-machacuy, cocoposa (in Spain) and jequitiranaboia (in the Amazon region and elsewhere in Brazil).

 

Okay,     it could be a bug,…..   or a small town in  Texas, …..   or a Great  TEX-MEX dish that can be used for all kinds of things. ( tacos,  burritos, omelets  etc. ).

Well,   you are right on all 3 of those answers ,  but today we are going to look at the SHREDDED BEEF  recipe.

Originally made   from dried  spiced beef similar to jerky and then reconstituted to be used in other dishes , this is a shortcut and comes pretty close to the same flavor.

This is Big Dave’s Beef Machaca

Marinade:

1/4 cup Worcestershire sauce

Juice of 2 limes

2 tsp. garlic powder

1 tsp. cumin

1 tsp. chili powder

1/2 tsp. salt

1/2 tsp. fresh ground pepper

1/2 cup olive oil

MACHACA

3 lb Chuck roast – trimmed and cut into 1/4 lb pieces

1 large onion – diced

1 green pepper – diced

4 cloves garlic – smashed and minced

1 jalapeno – minced

1 140z can diced tomatoes /w peppers

1/4 cup beef broth or  1/4 cup water with 2 beef bouillon cubes

1 tbsp. Mexican oregano – makes a difference,  go get some

1 tbsp. cumin

1 tsp favorite hot sauce

salt and a grind of pepper

For the marinade mix all ingredients together with a wisk.  Poke meat all over with a fork …unless you have one of these

Norpro Professional Meat Tenderizer

I  happen to have one, I use it  a lot.

Cover meat well with marinade and put in a heavy zip lock bag. them in a bowl ,  then in the frig.  Marinate over night . Next day take meat out of frig and let come up to room temp – about 30 min.

In a screaming hot cast iron frypan sear meat a few pieces at a time till nice and browned all over

Add meat to crock pot or large soup pot

Turn heat to med and Fry onions peppers in the same frying pan for about 5 min . Add garlic fry for 2 more min

Add everything else, stir well  and bring to a boil .

Add to crock pot with beef

Cook on low in the crock pot  for about 6 hours   or on the stove top for about 2  hours  —-   until meat falls apart.

Remove meat from heat and shred with 2 forks

Return meat to pot and  simmer until  thick – almost dry

Make into tacos, burritos,  throw it in a omelet, or just spread it out on a plate and sprinkle with cheddar cheese and cilantro
