POLISH CABBAGE POTATO BACON CASSEROLE

Okay, so this could be a side dish or a whole meal.   I like gouda cheese , that’s why I used it . You could use Edam  or some other mild white cheese I guess.

Also when your mixing this during the : COOK TILL IT WILTS ” stage you will find it easier if you use a spatula and a large spoon to toss it , or fold it over and over.

3 MED potatoes  cut into 1/2 cubes

4 slices bacon – diced

1 med cabbage –  cored,  cut into 1/4’s and sliced as fine as you can , like cole slaw

1 large onion  – chopped

3 cloves garlic – smashed and minced

2 splash of apple cider vinegar

1 handful parsley – chopped

1/2 cup  of 1/2 and 1/2

1/4 cup breadcrumbs

1 /2 Tsp.  smoked paprika

7 oz.  smoked gouda cheese

Turn oven on to 375′

Add potatoes to sauce pan .  cover with water,  dash of salt  bring to a boil and then lower to simmer until just fork firm.

Fry bacon in a large frypan,  remove bacon

Add onions ,  garlic and cabbage in that order and cook until wilted and slightly browned

Add apple cider ,  scrape bit from bottom of pan

Add potatoes, salt and pepper,  and bacon,  parsley  and 1/2 ans 1/2  , paprika,   stir well.

Add 1/2 cheese ,  mix well

Lightly coat a baking dish 9 x 13 with butter or PAM

Add cabbage to dish and pat firmly

Sprinkle rest of cheese on top

Cover with foil and bake for 20 min.

Remove foil and bake for 20 more min. till  golden and bubbly

Let rest 10 min.
