A NEW CALAMARI WITH ORECCHIETTE AND OLIVES

Okay,   So  yes it seems to be tough to cook calamari right.  At the restaurant you will either get it made exactly perfect or  more times than not you will get rubber bands.

SO now here is the secret to cooking it correctly at home.

After many long years of traveling through Italy,  talking and cajoling the top chefs,  sifting through ancient cookbooks I have discovered the secret.

( and yes, GOOGLE is my friend ) SO, there is only 2 ways to cook calamari

1 ) Fast….real fast  —  1 min in hot oil    EXACTLY  ONE MINUTE IN HOT OIL ….YOU BETTER USE A WATCH.

AND

2) Long  and SLOW. That is so the collagen  has a chance to breakdown and become very tender.   Kinda of like  a long slow braise with a brisket.

1/2 lb. orecchiette

      …….

SO………… MAYBE THIS IS A NEW PASTA FOR YOU   .
EXTRA VIRGIN OLIVE OIL
3 CLOVES GARLIC –  SMASHED AND MINCED
1 LB SQUID –  IF FROZEN PUT IN A BOWL OF COLD WATER FOR ABOUT 15 MIN TO THAW
1  14oz CAN DICED TOMATOES
1/2  CUP DRY WHITE WINE
1/2 CUP BLACK AND GREEN OLIVES – CHOPPED
1 HANDFUL CHOPPED FLAT Italian   Parsley
parmesan CHEESE

Cook pasta according to directions on the box
 After adding pasta to the water,  heat  a little oil in a skillet .
Add garlic and cook until golden
Add squid,  tomatoes,  wine and heat to simmer
Cook stirring occasionally for 30 min.
Add olive, salt and pepper,  cook 5 more min.
Add cooked pasta and parsley,  mix altogether.
Plate and grate  ( with your new microplane ) a little Parmesan cheese on top

Eat and Enjoy !

    I do not like squid and I will not touch it. It looks like a snake! So I am going to use shrimp instead for this recipe. Will let you know how it turns out but I will have to cook it fast or it will be like rubberbands! I only had 7 friends to send this to so I guess my food will be halfway stuck!!! ………….Cheryl
