PAN SEARED STEAK and potato and asparagus

 Pan-Seared Filet Mignon with Shallot-Wine Sauce
Okay   ,  So it was Valentine ‘s Day once again and it was to late to make reservations at any of the big swanky restaurants,   I still wanted to treat my sweetie to a nice steak dinner so I decided to make it at home.
There has been a standing rule at my house for a long time that we do not cook steaks inside,  like under the broiler, because they turn out grey and crappy and ruined .   So if we want steak we always ALWAYS fire up the grill and make them to perfection.   Even if it’s raining,    even if it’s cold ,   even if it’s cold and snowing,   I’ll fire up the grill.
Well,  looking out the window at the 3 FOOT HIGH DRIFT  covering my patio and grill  I thought maybe I could try making the steak inside just this once.
Turned out okay.

Scrub  2 baking potatoes , dry with paper towel
Oil lightly , sprinkle with season salt
Place  on foiled  baking sheet in 400′ oven for 1 hour

After 55 min make the asparagus
Cut 1 inch off the bottom  ends of asparagus
Place in sauce pan
Just cover with water
Simmer for 5 min.

1 or 2  boneless rib – eye steak – 1 1/2 inches thick – go to the butcher
Kosher salt
Fresh ground pepper
extra virgin olive oil
CAST IRON FRY PAN
Thick oven mitt
Tongs

Meat thermometer –   This is  pretty cool and you are going to use it quite alot

Remove steak from frig and let come up to room temperature.  About 30 min.
Place cast iron fry pan in oven turn up to 500′ for 15 min.
Remove pan from oven and put on burner  – HIGH – for  5  min.
Coat steak with oil and sprinkle with salt . Use more than you think is enough.
Grind on quite a bit of pepper  ( this will all work out  – trust me )

Place steak in the middle of dry pan
Cook  1 MIN –  DO NOT MOVE
Turn with tongs and cook  1  MIN.
 Put pan in oven for 2 min.   Flip the steak,   stick in the meat thermometer and cook for 2 more min.  If using a thermometer ,   115 is the magic number.   This will give you a med rare steak , and even for those folks that like MED you all will like this.  ( for med cook 3 min on a side – 120′ )
Remove from pan and tent with foil for 5 min.

Remove asparagus from water, Plate ,  top with pat of butter
Plate potato with butter and sour cream
Plate steak
Eat and Enjoy!

PS:  A VERY IMPORTANT     PS
.
WHEN YOU PUT THE STEAK IN THE PAN YOU ARE GOING TO GET SOME SMOKE…ALOT OF SMOKE…… SO YOU PROBLY WANT TO SHUT OFF THE SMOKE ALARM AND OPEN THE WINDOW .. I USED A FAN AND  IT WORKED OUT FINE……………
