SPICEY BUFFALO CHICKEN NACHOS

Okay,  so here’s a good snack for this cold afternoon.  And we can pretend that it’s healthy ………because it has chicken in it, ……. and  vegetables ,……..   and it’s baked  ……..
kind of……..
Sure,…. it’s healthy …….. oh yeah!

>

3 tbsp. extra virgin olive oil
6 cloves garlic – smashed and minced
1 tsp ground cumin
1 tsp Mexican oregano – makes all the difference for making Mexican food – ” Where do I get it  ?   ”   you may  ask.   The Mexican spice rack at you local grocery store or at the Mexican store ….. of course.
2 jalapeno peppers minced –   seeds in– hot     – less heat..seed the chili before mincing.
1 onion – diced
 8  red roasted peppers chopped  – in a jar or you can roast them yourself:
         put red peppers over gas grill or under broiler,  turning them until charred all over. Put in brown paper bag for 10 min . Then remove charred skin and seed and chop.
1/2 cup vinegar
1 1/2  lb. pound boneless chicken thighs   or breasts  – chopped into  bite size pieces sprinkle with one package of Sazon’
Sazon season salt if you  can get it,   most store have it
juice from 2 limes
4 tbsp. butter
1 cup sour cream  – not lite  – just doesn’t make sense
3 oz. blue cheese crumbled
1 bag white tortilla chips
8 oz.  Chihuahua cheese – shred it yourself ( cheaper and doesn’t have the ANTI- STICK- TOGETHER- CHEMICAL   ON   IT – that goes for all cheeses always buy whole )     – you can get this  almost everywhere
Handful thin sliced lettuce
3 stalks celery – sliced as thin as you can   1/2 moons –  not long
1/2 cup sliced black olives

Turn on oven to 425′  , place rack 2nd from the top ,  line baking sheet with foil
Heat 1 tbsp. oil in a saucepan add garlic,  jalapeños,  onion and sprinkle with salt.
sauté for 5 min,
Add 1 cup water and red peppers
Bring to a boil,   then lower to simmer  and cook until water is reduced to 1/2 about 10 min
stir in vinegar,     let cool .
Blend in blender or use a boat motor if you have one
Heat  oil in fry pan – high heat
Add chicken, add lime juice and lightly brown.
Turn off heat,   add butter ,  let melt ,  add sauce,   simmer 20 min.
Mix blue cheese and sour cream ,   salt and pepper
Spread chips on baking sheet in a single layer .
Scatter Chihuahua cheese evenly on top and bake until cheese melts 3 min
Spoon chicken sauce mixture evenly on chips
Sprinkle lettuce on top
Dollop  blue cheese mix on top of that
sprinkle celery and olives on top of that. ( some pickled jalapeno slices or fresh jalapeno slices will heat this up if you like )
