Okay, this is pretty good,   quick ,   and filling.

The rice noodle you can find in most grocery store or I guess you can use whatever noodle you want.

You could use shrimp or some other seafood and even shredded Chinese Cabbage if you want.

1 lb Rice noodles – sometime called  ‘RICE STICKS ”

4 eggs

3 tbsp sesame oil

1 1/2 cup chicken stock

2 tbsp soy sauce

2 tbsp spoon fish sauce – also available in small bottles at you grocery

2 tbsp Madras – style curry powder

1 tbsp  brown sugar

juice of 1 lime

peanut oil

2 tbsp grated ginger

4 large cloves garlic smashed and minced

1 lb chunk crab – I used the   imitation   .. I like it !!!

2 med onions  – sliced

1 large red pepper  – cut into  Julienne strips

2 bunches green onion – cut into 1/2 ” pieces

1 cup bean sprouts

1 Tsp  Toasted Sesame seed per serving – also found in most groceries

Place the noodles in a pan of very hot water,  enough to cover let stand about  5 min until soft but still chewy. drain

Beat eggs with  a splash of water and 1 tbsp sesame oil.  Set aside

Mix chicken stock,  soy sauce,  fish sauce,  curry powder, sugar and lime juice.  Set aside

Rinse noodles under cold water,  drain.

Heat 1 tbsp peanut oil in wok or large frying pan. Add eggs ,  let set, then scramble. place in another bowl and set aside

add 2 tbsp peanut oil to wok high heat.

Add ginger and garlic for about 20 sec then add crab ,  onions,  bell pepper,  stir fry for about 1 min until heated thru.

Add eggs,   curry sauce,   and  bring to boil  over high heat.    Add  noodles,  green onions,  and bean sprouts and toss and mix gently,  (do not break up noodles )      . until liquid is absorbed.

Use tongs to transfer to bowls and sprinkle with toasted sesame seed.
