Cold Crab Noodles
Okay, so i saw this and thought  ,    Hey!    this would be really good  when its hot out.
Then the weather turned cold and I had already gotten the stuff for this so I made it anyway.
Two bowls later and enough for a lunch ( froze and thawed just fine ) I said, ” This is good at any time of the year”
8 OZ    CELLOPHANE NOODLES  – RICE NOODLES ( ALMOST CLEAR – USE THE WHOLE PACKAGE)
I DUNGENESS  CRAB MEAT PICKED AND CHILLED IN FRIDGE  –  THAT’S  GREAT IF YOU LIVE BY THE OCEAN  OR IF YOU CAN GET ONE.   ME,… I USED  THE FAKE CRAB FROM          FREEZER BAY,    GROCERYIA POINT.        IT TURNED OUT JUST FINE
1/2 CARROT GRATED
1/2 CUP FISH SAUCE – YOU  CAN GET  THIS AT THE REGULAR STORE NOW , GET THE SMALL BOTTLE , NORMALLY YOU DON’T USE THIS MUCH
1/4 CUP WATER
2 STALKS LEMON GRASS – WHITE PART – SMASHED ( OR I USED THE ZEST OF 1 LEMON)
6 OZ PALM SUGAR ( I USED BROWN SUGAR)

1 HEAPING TABLESPOON  SRIRACHA GARLIC SAUCE

I LOVE THIS STUFF     – YOU CAN GET IT AT THE REGULAR STORE       – IT’S GREAT ,      YOU CAN PUT IT ON ALMOST ANYTHING  ( HAVE NOT TRIED ICE CREAM YET)


 JUICE FROM I LIME

FRESH  BASIL LEAVES

FRESH CILANTRO

BRING WATER TO BOIL AND COOK NOODLES ACCORDING TO DIRECTIONS  ( JUST A FEW MINUTES UNTIL SOFT)

DRAIN AND RINSE WITH COLD COLD WATER

MIX ALL OTHER INGREDIENTS  TOGETHER ,     EXCEPT BASIL  AND CILANTRO LEAVES

MIX CRAB , CARROTS, NOODLES  IN A LARGE BOWL

POUR FISH SAUCE MIXTURE OVER THE TOP AND MIX WELL

THROW  IN A HAND FULL OF CHOPPED CILANTRO AND A HANDFUL OF CHOPPED BASIL    FOLD IN WELL

EAT AND ENJOY !
