Okay,    Here is a lite salad to go along with your outdoor bar -be-que,  . This is easy to make.    Maybe you haven’t ever had COLD  sauerkraut  so give this a try and even those folks that don’t think they like sauerkraut will say

” WOW !    This isn’t too bad ,  I’ll take a second helping please.. “




1 lg can sauerkraut  –  opened and drained – well of course you have to open it

1 bell pepper –  chopped

1 cup celery – chopped

5 green onions –  chopped

1/2 cup   green olives – chopped

1 small handful parsley  – chopped

1 good polish dill pickle  – minced

1/2 cup sugar

1/2 cup vinegar

1/4 cup extra virgin olive oil

Mix  Sauerkraut, pepper , celery, onions, olives, parsley, pickle in a large bowl

Heat sugar , vinegar, and oil in a sauce pan and stir until sugar is dissolved.

Pour sugar mix over sauerkraut , alittle fresh ground pepper and mix well .

Cover and put in the ice box for at least 2 hours or over night.

Eat and ENJOY !
