Okay, this is for those of you that want to eat something healthy after those great bacon bombs!!!!!

I gave this a try thinking it would be okay and it came out alittle better than that especially the ” GRAVY.

It’s a vegan thing , don’t get all eeeewwwwwww ….it turns out pretty good

4 oz crumbled Italian  sausage seitan

Okay let’s stop here… it’s alittle bit of an effort to make this but it’s cheaper than buying it, if you can find it.


1 can white beans

1 cup vegetable broth

1 tbsp extra virgin olive oil

1 1/4 cup vital wheat gluten ( also good to use in baking anything)

1/4 cup nutritional yeast

2 cloves garlic – smashed ,minced

1 1/2   tsp fennel seed – crushed

1/2 tsp red pepper flakes

1 tsp sweet paprika  – remember .. get Hungarian Paprika not the red dust from the grocery store

1 tsp oregano

1 tsp thyme

couple of grinds of pepper

You need to stem these so get you steamer going first.

Mash beans in a large bowl Toss every thing else in and mix well.

divide into 4 parts .Take 4 large squares of tin foil and wrap each 1/4 dough in 1 piece of foil like you fold a  burrito or into a totsie roll ,whichever way works for you to get a tight     “SAUSAGE””.

Steam for 40 min. 1 link will do for this recipe.  Ssave the rest for later…… or don’t use it at all…. or taste it and decide , ” this tastes like crap ..are you kidding me ……I just wasted a hour…”       your fault for not having a beer nearby to be your  kitchen friend.

OKAY,  so you could leave this out  but you should really try it once it mixes in pretty good, or use real Italian  sausage or andouille I think would go well.


1/2 cup carrot – diced

1/2 cup parsnip – diced

1/2 cup celery – diced

1/2 cup red onion –  diced

2 cloves garlic – smashed

1 tbsp tomato paste

1/2 tsp thyme

1/2 tsp oregano

2 small potatoes – diced

2 green onions  – minced

1 tsp horse radish

1 tbsp olive oil

1 tbsp flour

1 cup red wine ( I USED Burgundy and it alittle sweet so I don’t think I would use any sweeter wine)  FWIW cant text, don’t have a phone


Use a large frying pan heat extra virgin olive oil and put sietan ,carrot,  onion, parsnip ,celery, and garlic all at once. Saute until onions are translucent.

Add tomato paste thyme and oregano.  Salt and  pepper and enough water to make a thin mixture. Simmer on low for 30 min.

Boil potatoes until very soft, drain, put back in pot on stove for 1 min to get rid of all water.

Mash and add horseradish , green  onions and salt and pepper

preheat broiler.


Heat 1 tbsp oil with flour , whisk together

Until smooth ( it will probly clump up on you, don’t worry about it)

Add wine and rosemary and whisk until you get a slightly thick gravy

You can assemble this in soup bowls if you wish , I left it  in the oven proof skillet I made the gravy in

Place the STEW in the middle of pan , top with potato patties .

Place under the broiler for 3 or 4 min until potatoes are slightly browned around the edges

Serves two
