SAN ANTONIO QUESADILLAS

Okay, so I got this from my favorite mother-in-law.  Thanks Ma!

It’s not real quick but its’ reeeeaal good!

4 corn tortillas – soft – yellow – use El Millagro if you can get them

2 large jalapeno peppers – diced , no seeds – for a little heat use 1/2 the seeds from 1 pepper, then you can ramp it up or down from there

5 cloves garlic – mashed and minced

1/8 cup extra virgin olive oil

corn oil –  small splash ( THIS IS REAL IMPORTANT – USING CORN OIL INSTEAD OF SOME OTHER OIL IS WHAT REALLY MAKES THIS DISH….yeah yeah I know ..it’s not very healthy but you only using a little bit … so what the heck )

1/2 cup grated sharp cheddar cheese

2 tbsp minced white onion

1/2 handful cilantro –  minced

optional – small splash Ortega taco sauce – sometimes I do ..sometimes I don’t

Put peppers , garlic and olive oil in a small sauce pan and simmer on low for 15 min.

Heat small splash of corn oil in fry pan  Put 2 tortillas in pan to coat 1 side of each tortilla remove and add remaining 2 tortillas and swish around to coat one side of these.

On each tortilla , Place 2 tbsp pepper mixture , half the cheese, 1/2 the onion and 1/2 the cilantro ( splash of taco sauce if you want )

Place the other tortilla ( coated side up ) on top

Here’s the tricky part:

Try real hard to leave them alone to fry on very low heat for 5 min.     At this point they smell so good you will want to eat them right now , .. but you can’t…… try to distract yourself with a cold beer or a Margarita

Turn over for five more min.

Turn back over for 5 min.

Turn back over for 5 min.

You might have to do this again once or twice until they are very crispy. ( you might need another drink)

Then place on Paper towels and cover with another paper  towel for 5 min.

Cut in 4’s with kitchen shears

Eat and Enjoy!
