CILANTO CABBAGE SLAW

This is a refreshing and light slaw that everyone turned their nose up until they had it and then everyone wanted seconds,     ha!   ha !  ha!

1/2 cup extra virgin olive oil

1/2 cup fresh lime juice

1 tbsp vinegar

2 large cloves garlic – smashed and minced

1 tsp salt

1 tsp lemon pepper

mix these items and whisk well

IN A LARGE BOWL MIX:

1 head finely cut cabbage

1 handful cilantro – minced

1 small red onion – finely sliced

1 cucumber peeled and diced – ( unless you have fresh grown with no wax, most of the ones at the store have a thin wax coating, that’s why you want to peel it, unless you feel the need to eat wax)

4 radishes finely sliced

Pour dressing over the salad and mix well – your clean hands work the best

Cover and let sit in the icebox 1 hour

large pinch of pepper flakes

Eat and Enjoy!

    Had this on the 4th of July. Love cilantro, so ended up having seconds and taking his leftovers home!
    Good stuff!
