This is actually pretty filling and could be the main part of the meal.

I’m pretending to be a vegetarian part – time and this is one of the veggy low cal things I found.

2 tbsp ghee or butter
2 tsp fenugreek seeds
2 tsp cumin seed
4 cardamon pods
1 cinnamon stick
1 red onion – diced
1 large can diced tomatoes
2 tsp turmeric powder
1 tsp ground coriander
4 lbs peeled and cubed butternut squash 1/2 cubes – ( OR 1/2 AND 1/2 , 2 LBS POTATOES)
1 Serrano pepper – minced with seeds and all ( you can add more but one will light up your life! )
2 tsp brown sugar
2 tsp sea salt
1 tsp cayenne pepper
1 tsp chile pepper
1 tsp garam masala
Juice from 1/2 fresh lemon

Heat ghee ( or olive oil) in fry pan add fenugreek cumin cardamon and cinnamon stick
Cook 4 min until sizzling
Add onion until golden
Add to slow cooker turn on high
Add tomatoes , turmeric and coriander mix well.
add squash , chile, sugar , garam masala, salt , cayenne and lemon juice mix thoroughly
Turn Down to low
Cook 4 hours or until squash is tender

Stir occasionally

Eat and Enjoy!

If Fenugreek and garam masala is alittle to exotic for you then leave it out ! Although I will be sharing recipes that use these in the future and if you like Indian food you will be using these.
