POLISH BURRITO

This not only sounds good ,  it really is  ,  and it’s my own invention.

2 Links fresh Polish sausage – cut in half length-wise

2 cloves garlic
Extra virgin olive oil
2 12″ wheat tortillas
1 12 oz can Franks sauerkraut
1/4 tsp caraway seed
fresh ground pepper ans kosher salt
4 oz Swiss cheese – shredded
1 cup finely sliced cabbage – as fine fine fine as you can cut it
1/2 cup minced good polish pickle
Brown mustard

The thing with making burritos , kinda like everything else is to have everything cut and ready before you start. Yeah, just like you were on your own cooking show. Makes life and cooking a lot easier and also lets you eat the hot food hot

Empty can of sauerkraut into a small sauce pan add onion and caraway seed and pepper, bring to a simmer
Add a little oil to a frying pan , smash garlic and fry until just golden. Remove garlic
Fry polish until about 1/2 done,  turn over  and finish frying cut side down.
Drain sauerkraut

Lay out tortilla
Place one Polish on tortilla
1/2 sauerkraut
1/2 cabbage
1/2 cheese
1/2 pickles
Squirt a little or alot of the mustard all over everything
Roll up like a regular burrito
