MEXICAN CHICKEN TORTILLA CASEROLE

Okay, so I’m thinking I would like some chicken burritos…but I don’t want to go to the Mexican store for big tortillas . So maybe I’ll make chicken enchiladas…. no I’m too lazy.

Hey, I know I’ll mix both flavors together and make a casserole.

And……..it turned out really good.

2-3 lbs chicken breast

Sazon seasoning – at the Mexican store

5 limes

15 tortillas

I can refried beans

1 med white onion – diced

1/2 lb each sharp cheddar and monterey jack cheeze – grated. Use a box grater

like Gramma use to have . It costs about $3.00 and it is so much quicker and easier….DO NOT SCRAPE KNUCKLES OR FINGERTIPS BECAUSE IT REALLY HUUURRRTTTSSS !!!!! mix cheeses

1 large can La Victoria enchilada sauce – It’s the best if you can find it     lavic

Cut chicken breasts in to 1/2″ strips and sprinkle with Sazon – wait 20 min

Sprinkle chicken with juice from 1 lime – wait 20 min

Get a cast iron frying pan really hot , add a little extra virgin olive oil

fry chicken quickly until just slightly browned, shred or cut into little pieces.

Spread a little sauce in the bottom of a 13 x 9 baking dish, put down 1 layer of tortillas

Sprinkle with 1/3 of chicken, onions, cilantro, refries, cheese mixture and 1/2 lime juice, 1/3 of sauce and a little cumin

Repeat 2 more times

Bake for 40 min. or until hot and bubbly

Eat and Enjoy !!
