MANHATTAN CLAM CHOWDER

This turned out really well.     My wife liked it and she doesn’t like clams!!!

1 lb bacon – chopped

2 tbsp butter

1 onion minced

2 stalks celery –   minced

3 bay leafs ( you always have to use 3)

2 tsp thyme

dash cayenne pepper

2 tbsp flour

25 oz  or so      can    minced clams

2 16 oz can whole tomatoes

2 med. potatoes – diced

1 carrot shredded

1 bell pepper minced

3 garlic cloves ( you always have to use 3, at least)

2 tblsp Worcestershire sauce

2 tsp old bay seasoning ( or creole seasoning because all the stores by me did not have old bay seasoning)

salt and fresh ground pepper

Cook bacon in dutch oven remove bacon.    Melt butter in bacon drippings and saute onion and celery,

Add bay leaf, thyme cayenne pepper, and flour and whisk until smooth. Cook 3 min.

Whisk in clam juice tomatoes and 1 cup H2O.

Bring to boil and keep stirring, turn down to simmer

Add carrots and bell pepper .Cook until tender ( 10 min)

Add garlic, Worcestershire sauce ,clams and potatoes, bacon and seasoning.   Simmer 15  – 20 min until potatoes are done

salt and pepper to taste
