Beer and Squash

p22Well, it’s about 100 ‘ give or take and I have found a really good beer to cool off with. Drop Dead Blonde Ale from  Steven’s Point brewery in Wisconsin.

It’s a light beer ( not lite as in low calories , light as in not heavy) with a real crisp taste. I got it on sale and I’m kinda hooked . Will have to wait and see what price it goes back to  so I can empty my wallet.

Dan says he already has alot of summer squash. I take it it’s the yellow and not Zucchini   ( although to some folks it’s all the same ) here’s two recipes for them

either one or mix the squashes

3 zukes sliced 1/4″

2 yellow onions sliced 1/4″

6 tomatoes sliced 1/4″

minced parsley

1  1/2 cup shredded sharp Wisconsin cheddar cheese (chz)

olive oil

Lightly oil casserole dish . Spread 1/3 squash,  1/3 onions, , 1/3 tomatoes   sprinkle with 1/3 parsley,  1/2 cup chz

repeat layering top with a dash kosher salt and fresh ground pepper

Pop in 325’ oven for 1/2 hour until bubbling.

Stuffed Zucchini

4 med Zukes

1 onion chopped

1 lb good sausage( pork, italian garlic or whatever you think will taste good)

1 greenpepper chopped

1 stalk celery chopped

1/2 cup raisins

olive oil

saute onion , green pepper and celery untill onion is clear. Remove from pan .Brown sausage add to veggies and raisins .Mix. fill carved out squash with this sausage filling. Place on cookie sheet in 325 oven for 1/2 hour or until squash is soft but still . a little  firm.     Slice and enjoy

Both yellows and Zukes! Actually had basically that same dish for dinner last night (probably every night for next month), but in sauce pan instead of oven. Too freaking hot to fire up the oven.
